A culturing note for those wishing to use almond and other nut milks. Commercial nut milks simply will not work for culturing. To make kefir with nut milk, you will need to first make fresh nut milk at home.
Our Kefir Starter Culture is by far the easiest option. Simply add the starter to a quart of additive free vegan milk, culture and enjoy. It may be recultured 2-5 times.
The Water Kefir Grains are the best reusable option for vegans and those who must avoid all dairy. Once the grains are producing good water kefir, the finished cultured water can be used in vegan milk at the rate of 1/4 cup per quart.
Mix kefir and milk, cover and culture at room temperature for 18-24 hours. As a bonus, healthy, active water kefir grains can also be used to culture additive free coconut water as well. They do need to be maintained in a cane sugar and water solution as directed.
Milk Kefir Grains can be used occasionally in non-dairy milks free of additives. They do need to be activated and maintained in dairy milk though, so are not a great option for vegans or those who must avoid dairy.
